Moussaka! The queen of Bulgarian cuisine! One of the most beloved and most often prepared dishes. Moussaka is the absolute favorite of every Bulgarian and foreigners. If you are worried about what to cook for guests from abroad, you can bet on moussaka. Foreign guests are unlikely to like the tarator and are unlikely to gather the strength to try the roasted peppers with tomato sauce, but the moussaka will definitely gain their trust, they will lick their fingers and ask for an extra portion. The recipes for moussaka do not have many variations, the options are mainly in the preparation of the filling. The recipe for moussaka offered here is classic, easy and suitable for more inexperienced cooks.

Heat the fat in a deep frying pan or saucepan. In the heated fat, sauté the washed, cleaned and finely chopped onion until soft. Add the finely chopped tomatoes and minced meat, black pepper and savory, as well as a teaspoon of salt. You can use minced meat as you have on hand, but the most delicious moussaka is made with minced meat mixture - 50% pork and 50% beef.
After the water from the tomatoes boils, add the red pepper. Wash, clean, peel and cut the potatoes into small cubes and add them to the meat. Grease a pan on the bottom on which you place the other half of the tomatoes and pour the moussaka mixture on them. Add an incomplete tea cup of hot water and place in a preheated 200 degree oven. Bake until the water boils and the potatoes are golden.
It's time to prepare the moussaka topping. It is easy and very fast. Stir in the yoghurt and eggs, then add the flour, stirring constantly, until a smooth mixture is obtained. Finally, add the grated yellow cheese. Pour the moussaka and bake until pink.
